Dolphins between Utila Isles Honduras and Roatan

We had the privilege of riding with Captain Vern between Utila and Roatan a couple of years ago. We didn’t get to see the dolphins on our trip but appreciate the video.

What is a Palapa?

According to Wikipedia,

A ”’palapa”’ (a Spanish word of Malayan origin, meaning “pulpous leaf”) is an open-sided dwelling with a [[thatch]]ed roof made of dried [[Arecaceae|palm]] leaves. It is very useful in hot weather and, therefore, very common in Mexican beaches, such as in [[Acapulco]]. It is perhaps one of the most important architectural contributions of Philippine culture to Mexican West cultures.

It is also common to see in one of the Bay Islands,Utila Honduras.

Here is the outside of the palapa:

These pictures show the construction of the palapa:

If you look closely you can see how this palapa was constructed. They start with a wooden frame of four poles that meet at the apex. Wooden cross-poles (parallel to the ground) are placed at intervals between the apex poles.

Palm leaves (dried) palm are layered over the frame.

Pretty cool!

Utila Honduras Breakfast

We have breakfast every morning under the palapa watching the waves come in and the sun rise.Utila Honduras Eating Breakfast Under Palapa

Typical breakfast is scrambled eggs, zucchini and coffee. This morning we had left over rolls from the local bakery.

Bay Island Honduras Sunrise

There was a beautiful sunrise one morning.  (There have been several but I caught this one on just right.)

Being on a small island allows you the privilege of observing both the rising of the sun as well as the setting.

This sunrise reminded me of several verses:

“The heavens are telling of the glory of God;
And their expanse is declaring the work of His hands.
Day to day pours forth speech,
And night to night reveals knowledge…”  Psalm 19

Sunset at El Picante, Utila, Honduras

There are several great places to eat in Utila.  One of those is El Picante, owned by John and Theresa.  (They are a great couple and we have enjoyed getting to know them.)

They recently moved to a new location, overlooking Utila Bay.

We got there at sunset and had a gorgeous view.

I think of my parents every time I see a sailboat anchored in the bay.  They spent many years in the Virgin Islands and saw many wonderful sunrises and sunsets.

(We would have had less sand flies if we had been a bit offshore!!)
